The amazing sweet potato rich in vitamins, fibre, potassium and other essential nutrients.
Women, these delicious gems are perfect for the first few days of your menstrual cycle with its high levels of vitamin A to help the liver process estrogen. Sweet potato is also known to reduce pms symptoms.
So really you can't go wrong with this amazing snack.
You will need:
- x3 Sweet potato (steamed)
- 1 TBS olive oil
- 1 Cup almond meal
- 3-4 sprigs of rosemary
- Salt and pepper (to taste)
- Nutritional yeast (or parmesan cheese)
- Handful of basil
- Handful of parsley
What to do:
Preheat oven to 180° and line baking tray with baking paper.
In one bowl, mash sweet potato and add olive oil and salt and pepper.
In a seperate bowl, mix together almond meal, rosemary, nutritional yeast, basil, parsley and salt and pepper.
Form sweet potato mixture into your preferred gem size, coating the sweet potato mixture with almond meal and place on prepared tray.
Bake in the oven for approximately 40 minutes or until cooked through.
Allow to cool and enjoy with your favourite sauce, or try our mustard sauce.
Dipping Sauce
- 1 TBS Dijon mustard
- 2 TBS tahini
- 1/2 lemon juiced
- 2 TBS honey or maple syrup
- 2 TBS coconut aminos or soy sauce
- Pinch of Salt and Pepper
- Add a dash of filtered water if the sauce is too thick.
Add ingredients together until smooth. Enjoy with your sweet potato gems.
