Raw Peppermint Slice

Free from: gluten, dairy, refined sugar


Base:

5 Medjoool dates

2 Tbsp Cacao powder

1 Tbsp 100% pure maple syrup

1 Tbsp coconut oil

1 cup raw almonds

Pinch of pink Himalayan or sea salt





Peppermint filling:

1 1/2 cups desiccated coconut

3 Tbsp 100% pure maple syrup

3 Tbsp coconut oil

1 tsp matcha powder

1 1/2 tsp peppermint flavour (I used Simply Organic)

5 Tbsp coconut cream


Chocolate layer:

1/4 cup coconut oil

1/4 cup coconut cream

2 Tbsp 100% pure maple syrup

1/4 cup cacao powder

Pinch of pink Himalayan or sea salt

1 tsp vanilla extract









Method:

  1. Line a slice tray with baking paper.

  2. In a food processor, blend all base ingredients until it becomes sticky and forms together.

  3. Press base ingredients firmly into the lined tray and place into the freezer.

  4. In a food processor, blend all pepper filling ingredients until well combined.

  5. Press filling over the base layer and place back into the freezer.

  6. In a bowl, mix together all ingredients of the chocolate layer until well combined.

  7. Pour chocolate over peppermint filling and place in the fridge until set.

  8. Enjoy!
